The milk is produced in the villages surrounding the Avdhimou area, which is located between the districts of Limassol and Paphos. The soft, springy, oval-shaped curd has a delicate yet tangy flavor and resembles fresh mozzarella. The best aspect is how adaptable it is. This delicious gourmet cheese can be grilled, grated, marinated, fried, or eaten plain. Try it on a grilled portabello mushroom sandwich, cubed on top of a salad, or sliced and grilled and served with eggs for brunch.
